Chicken and Wild Rice



This I make so much because it is healthy and really good!


1 rotisserie chicken (chopped)

4-6 cups vegetable broth

2 cups wild rice mix

1/2 onion (finely chopped)

2 stalks celery (finely chopped)

2 carrots (finely chopped)

1/2-1 cup frozen peas

2 tablespoons olive oil

1-2 cloves garlic

Salt pepper to taste


In a large pot, add olive oil and carrots on medium high. I cook for about five minutes, then add onion and celery. Cook for about five more minutes. Add chicken and stock. Bring to a boil, then add rice and turn down to low until rice is done. Then add peas!


You can either cook until most of the liquid is gone or leave a little for soup. It reminds me of chicken pot pie, but healthy!
